Ingredients:
1/3 cup dry lupin splits
2 tblsp any cooking oil
2 tsp ginger garlic paste
2 small onions
1 cup chopped bell peppers
1/2 tsp red chilli paste
1/2 tsp turmeric powder
1/2 tsp paprika
1 tsp cumin seeds
1 tsp coriander-cumin powder
1/4 cup chopped coriander
pinch of asafoetida
salt to taste
Recipe:
Soak 1/3 cup Lupin splits in water for 4-5 hours. Once soaked, the lupin splits will increase in volume 2.5-3 times more. Boil the splits till they become soft and crush them into a fine paste with 2.5-3 cups of water (add more as per your desired soup consistency).
Heat oil in a pan. Add cumin seeds and let them splutter. Add asafoetida and chopped onions. Cook onions until they are caramelized. Add chopped bell peppers, ginger garlic paste and salt. Cook them for 5 minutes & keep stirring. Add red chilli paste, turmeric powder, coriander-cumin powder and paprika. Mix well. Add chopped coriander and lupin paste. Cook for another 5-7 minutes. Garnish with chopped cilantro and lemon juice.
