Crunchy cauliflower bites - Keto friendly, gluten free, high in protein, high in fibre and vegan

Ingredients:

1.5 cup cauliflower florets - approx. 200 g

1/4 cup lupin flour

2/3 cup lupin crumbs

1 tblsp Lemon juice

Chopped cilantro

Freshly cracked black pepper

Salt to taste

Recipe:

Take 1/4 cup lupin flour. Add chopped cilantro, 1 tblsp lemon juice, salt and pepper to taste. Add water to make it into a runny paste consistency. Take 2/3 cup lupin crumbs in a separate bowl. Add salt & pepper to taste. Take approx. 200 g washed and cleaned cauliflower florets. Dip them into first lupin paste and then roll them into lupin crumb mix. Bake them in the oven at 350 degrees F for 35-45 minutes or till they are perfectly brown and crisp (don’t forget to flip them in midway for even baking).

Crunchy cauliflower bites are vegan & high in complete source of protein. The recipe can serve two people and has whopping 50 g protein in total. It is also gluten free and keto friendly.
